Fjäre’s Rare Clover Club
From the lands of the Vikings comes a cocktail recipe featuring an award-winning “sequel” gin.
The Swedish west coast is full of tales of the Vikings, castles, gold findings and mysticisms. Right there, by the shoreline of Haaland County’s small village of Fjärås is an old farmhouse where the Fieruaas Distillery is located. The name Fieruaas’ origin dates back to 1357 from the hill of Fjära Bräcka, where the church is located today. The Fieruaas Distillery made a name for themselves with their win at the 2021 London Spirits Competition. Fieruaas Distillery draws inspiration from these tales of lore, to create the recipe for their award-winning Fjäre Gin.
At the helm of the distillery is master distiller Michael, who has been in the wine and spirits industry for over thirty years. He was ready to retire and enjoy an easy life but his growing creative desire meant he would come to Fieruaas Distillery. Today, Michael spends most of his time exploring the senses, figuring out the ever changing balances between the infinite ingredient combinations, flavours and tastes. This is what led to Fieruaas Distillery’s triple silver win at the 2021 London Spirits Competition.

Fjäre London Dry Gin
With a score of 86 points, the Fjäre London Dry Gin was the highest rated spirit at the competition, from Fieruaas Distillery. The London Dry is headlined by herbs like thyme and rosemary on the nose with a delicate juniper scent. There’s black pepper and cardamom on the palate with a pronounced finish of liquorice. While this is the distillery’s original gin, a fun fact is that it was introduced after their “sequel” gin, the Fjäre Rare Distilled Gin.
Fjäre Rare Distilled Gin
The “sequel” closely follows the original, Fjäre London Dry Gin on the award-winners list with 84 points. The Fjäre Rare Distilled Gin contains handpicked and carefully selected botanicals of juniper, coriander seeds, fennel, black pepper, lemon peel and the aromatic wild plant, myrica gale. The gin is produced according to the rules and principles of a London Dry. Fjäre Rare Distilled Gin is also at the base of the distillery’s cocktail, the Rare Clover Club.
Ingredients:
- 4 cl Fjäre Rare Distilled Gin
- 3 cl raspberry syrup
- 2 cl lemon juice
- 1 cl egg white
Method:
Add Fjäre Rare Distilled Gin, raspberry syrup, lemon juice and egg white to a shaker without ice and shake well. Add ice to the shaker and shake well for a few minutes until well-chilled. Strain into a chilled cocktail glass.

Ingredients:
- 1.5 dl sugar
- 1.5 dl water
- 2 dl raspberries
Method:
Add the sugar and water to a saucepan over medium heat. Bring it to a simmer and cook until the sugar has dissolved. Turn off the heat and add the raspberries into the syrup. Let it cool for a couple of hours. Strain the raspberry syrup and pour it into a glass bottle and seal tightly with a lid. Store it in the refrigerator.
The list of winners from Fieruaas Distillery is completed by the Fjäre Oak Dry Gin. The gin is matured for 30 days in Swedish oak barrels from Småland and Västergötland. The oakiness of the barrels intensifies the juniper and creates an elegant, gentle flavour that gives out hints of cloves.
